Gud Makhana with Paawak Jaggery

Gud Makhana, or Jaggery Foxnuts, is a delightful and healthy snack that combines the crunchiness of makhana (foxnuts) with the rich sweetness of gud (jaggery). INGREDIENTS: 

- 2 cups Makhana (foxnuts)

- 1/2 cup PAAWAK JAGGERY CUBES

- 1 tbsp ghee

- 1 tbsp cardamon powder

- A pinch of salt 

 

METHOD:

 

  • Heat a non-stick or heavy-bottomed pan on medium heat.
  • Add the makhana to the pan and dry roast them for about 7-8 minutes until they become crispy and light golden brown. Stir continuously to avoid burning.
  • Once roasted, remove the makhana from the pan and set them aside.
  • In the same pan, add the ghee and let it melt over low heat.
  • Add the PAAWAK JAGGERY CUBES to the melted ghee and stir continuously.
  • Cook the jaggery on low heat until it melts completely and forms a smooth syrup. This should take about 3-4 minutes.
  • Add the cardamom powder and a pinch of salt to the jaggery syrup and mix well.
  • Once the jaggery syrup is ready, add the roasted makhana to the pan.
  • Mix well to ensure that all the makhana are evenly coated with the jaggery syrup.
  • Continue to stir for another 2-3 minutes on low heat until the jaggery starts to crystallize and the makhana become glossy and sticky.
  • Remove the pan from the heat and transfer the jaggery-coated makhana to a plate or a parchment-lined tray.
  • Allow the Gud Makhana to cool completely. As they cool, the jaggery will harden, giving the makhana a crunchy coating.
  • Once cooled, your Gud Makhana is ready to be enjoyed. Store them in an airtight container to maintain their crunchiness.
  • Serve this delicious snack as a tea-time treat, a festive sweet, or a healthy munching option anytime during the day.
